  • Prepare the Chicken: Cut each of your two chicken breasts in half widthwise, creating four thinner cutlets. This helps them cook faster and more evenly. Season both sides generously with salt and pepper to your taste.
  • Prepare Seasoning Blend: In a small bowl, combine ¼ teaspoon salt, ¼ teaspoon ground black pepper, paprika, garlic powder, and dried thyme. Mix well until all spices are evenly combined. Set this seasoning blend aside.
  • Heat Skillet: Place a heavy-bottomed large skillet (or a Dutch oven) over medium heat and allow it to heat up until it’s hot enough for searing.
  • Add Fats: Add 2 tablespoons of butter to the hot skillet and swirl it around with a wooden spoon or tongs until it’s completely melted. Then, add 1 tablespoon of olive oil to the pan; this combination helps prevent the butter from burning.
  • Sear Chicken: Carefully place the chicken breasts in a single layer in the skillet. Sprinkle one side with half of the prepared seasoning mixture. Cook for 4-5 minutes, allowing them to develop a golden-brown crust.
  • Flip & Finish Chicken: Flip the chicken breasts to the other side and sprinkle with the remaining seasoning. Cook for another 3-5 minutes, or until each chicken breast reaches a minimum internal temperature of 165°F (74°C) as measured with a meat thermometer.
  • Remove Chicken: Once cooked, remove the chicken breasts from the skillet and transfer them to a plate. Set them aside while you prepare the sauce.
  • Prepare for Mushrooms: Remove the skillet from the heat for a moment and add the remaining 1 tablespoon of butter. Swirl to melt.
  • Sauté Mushrooms: Add the sliced mushrooms to the skillet and toss them well to coat them in the melted butter and chicken drippings. Add any remaining seasoning blend from the small bowl to the mushrooms.
  • Cook Mushrooms: Sauté the mushrooms over medium heat until they are soft, beautifully browned, and have released most of their liquid, which should take about 5 minutes. If you notice significant browning (fond) on the bottom of the skillet, you can deglaze the pan with a splash of wine, chicken broth, or water to release it, enhancing the flavor.
  • Start the Cream Sauce: Pour in ¾ cup of heavy cream. Immediately use the bottom of your wooden spoon to aggressively scrape up any browned bits that are stuck to the bottom of the pan. These “fond” pieces are packed with flavor! Once most of the bits are scraped up, reduce the heat to medium-low.
  • Thicken Sauce: Let the sauce gently simmer for 3-5 minutes, continuing to scrape the bottom of the skillet and stirring the sauce until it has thickened to a luxurious consistency.
  • Add Parmesan: Sprinkle in the ½ cup of grated parmesan cheese, stirring vigorously until it is completely melted and smoothly incorporated into the sauce.
  • Adjust Consistency: Add the remaining ½ cup of heavy cream to the skillet to slightly thin the sauce to your desired consistency. Stir well to combine.
  • Incorporate Spinach: Add the 5-6 cups of fresh baby spinach (2 heaping handfuls) to the skillet. Gently stir, folding the spinach into the creamy sauce until it is fully coated.
  • Wilt Spinach: Continue to cook for 1-3 minutes, stirring often, until the spinach has completely cooked down and significantly reduced in volume. If the sauce becomes too thick during this process, add a few more splashes of heavy cream to reach your desired consistency.
  • Combine & Serve: Remove the skillet from the heat. Carefully return the cooked chicken breasts back into the skillet, nestling them into the creamy spinach and mushroom sauce. Spoon the luscious sauce generously over each chicken breast. Taste the sauce and chicken, adjusting the amount of salt and pepper as needed for perfect seasoning.
